Jazz pizzicato technique involves plucking the string with much more of the finger (or fingers) than orchestral pizzicato. The side of the finger (generally from the second knuckle to the tip) is used and the string pulled to the side rather than pulled away from the fingerboard.
Jazz Pizzicato allows for more lyrical playing and greater fluency.
